- 1 cup gluten-free all purpose flour
- ¼ tsp xanthan gum
- ¼ tsp salt
- 1 ½ tsps Baking powder
- 2 tsps sugar
- 2 eggs
- 2 Tbsps vegetable oil
- ½ cup milk
- ½ Tbsp chopped Dill
- To serve
- cream cheese
- smoked Salmon (thinly sliced)
- Dill

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Gease 8 muffin tins.
2.
Mix together the flour, xanthan gum, salt, baking powder and sugar in a mixing bowl.
3.
Whisk together the eggs, oil and milk. Pour into the dry ingredients and stir until just combined. Stir in the dill.
4.
Spoon into the tins and bake for 20 minutes until risen and golden. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
5.
Split the muffins in half and place a spoonful of cream cheese on 1 half. top with the salmon and sprinkle with dill. Replace the muffin tops.
