- ⅔ cup Rice flour (sifted)
- ⅔ cup gluten-free all purpose flour (sifted)
- ½ cup Potato starch (plus extra for dusting)
- ½ cup Cornflower
- 2 tsps xanthan gum
- 2 Tbsps caster sugar
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp cream of tartar
- ¼ cup unsalted butter (cubed)
- 1 large egg (beaten)
- ½ cup Buttermilk

Preparation steps

Combine the flours, cornflour, Xanthan gum, sugar, salt, bicarbonate of soda, and cream of tartar in a mixing bowl. Whisk briefly to mix.
2.
Preheat the oven to 190°C / 375° F. Line a large baking tray with greaseproof paper.
3.
Rub the butter in the flour mixture until it resembles breadcrumbs. Add the egg and buttermilk, stirring until a dough comes together.
4.
Knead the dough briefly before shaping into an oval. Lift onto the baking tray and score the top with a sharp knife. Dust with potato flour.
5.
Bake for 40-45 minutes until golden and firm to the touch.
6.
Remove to a wire rack to cool.
