- 3 large eggs
- ¼ cup sunflower oil
- ¼ cup sugar
- 1 ¼ cups milk
- 1 tsp salt
- 1 Tbsp xanthan gum
- ⅓ cup Potato starch
- 1 cup white Rice flour (plus extra for dusting)
- 1 cup Brown rice flour
- 1 cup Tapioca flour
- ⅓ cup Amaranth flour
- 1 Tbsp active dry yeast
- 1 tsp Cider vinegar
- To glaze
- 1 egg (beaten)

Preparation steps
1.
Line a baking tray with non-stick baking paper.
2.
Beat together the eggs, oil, vinegar and sugar in a mixing bowl.
3.
Add the dry ingredients and stir to mix. Add the milk gradually, stirring to form a dough.
4.
Flour your hands and shape pieces of the dough into long rolls. Place on the baking tray.
5.
Brush with beaten egg and leave to rise in a warm place until doubled in size.
6.
Heat the oven to 190°C / 375°F. Place a bowl of water in the bottom of the oven to help create steam while cooking.
7.
Bake for 20-25 minutes until golden and the base sounds hollow when tapped. Place on a wire rack to cool completely. Dust lightly with rice flour.
