1 Tbsp quick-rising active dry yeast
4 cups white Bread flour (plus extra for dusting)
0.333 cup sugar
½ tsp salt
¾ cup warm milk
¼ cup butter (melted)
2 large eggs
1 tsp grated lemon zest
¼ cup chopped, mixed Candied fruit
2 Tbsps raisins
¼ cup almonds (chopped)
1 cup powdered sugar
2 Tbsps water
½ tsp Almond extract

Preparation steps

1.
Combine the yeast, 110g|1 cup flour, the sugar and salt.
2.
Mix together the milk and butter. Beat into the flour mixture.
3.
Add the eggs and lemon zest and beat for 1 minute. Stir in the remaining flour to make a soft dough.
4.
Knead on floured surface for about 3 minutes.
5.
Add the fruit and nuts and continue kneading until evenly distributed and the dough is smooth and elastic. Use additional flour if necessary.
6.
Place the dough in a lightly oiled bowl. Cover and leave in a warm place to rise until doubled in size.
7.
Line a baking tray with non-stick baking paper.
8.
Turn the dough onto a lightly floured surface. Shape into a roundish loaf shape. Place on the baking tray. Cover with oiled cling film and leave to rise until an indentation remains after touching.
9.
Heat the oven to 180°C (160° fan) 350°F gas 4.
10.
Bake for 40-45 minutes until golden and cooked through. Leave to cool completely.
11.
Sift the icing sugar into a bowl and beat in the water and almond extract.
12.
Drizzle over the top of the loaf and leave to set.
