6 ½ cups Pumpkin (peeled, cored and sliced thinly)
4 ozs Hazelnuts (roughly chopped)
1 cup Gruyere (grated)
cup olive oil
salt
peppers

Preparation steps

1.
Preheat the oven to 180°C | 350F | gas 4.
2.
Grease a large oval baking dish with some of the olive oil and season the it all over. Arrange the slices of pumpkin in the dish, overlapping slightly.
3.
Drizzle the remaining olive oil over the top and season. Bake for 25-30 minutes until tender and soft.
4.
Remove from the oven and arrange the grated cheese and hazelnuts on top.
5.
Increase the oven to 220°C | 425F | gas 7 and return the gratin to the oven to brown for 5-10 minutes until the hazelnuts are toasted and the cheese is melted.
6.
Remove and serve hot.
