3 Tbsps honey
70 milliliters dry Red wine

Preparation steps

Peel, rinse and cook the sweet potatoes in boiling salted water for 15-20 minutes until tender but not mushy.

Rinse the pork tenderloin, pat dry and season with salt and pepper on all sides. Heat 2 tablespoons oil in a pan and fry the pork until golden brown on all sides. Add the honey. Deglaze with the red wine and simmer. Repeatedly pour over the glaze in the pan over the pork and cook over medium heat for 25-30 minutes.

Meanwhile, drain the potatoes, halve and cut into 5 cm (approximately 2 inch) thick slices. Heat the remaining oil in a pan, fry the potato slices for 5-6 minutes until golden and season with salt and pepper. To serve, cut the pork into slices and arrange with the sweet potatoes on a plate.
