250 grams fresh ginger
250 milliliters fruity white wine
½ lemon (juiced)
1 kilogram jam sugar

Preparation steps

Rinse and peel the ginger. Bring to a boil with the white wine, and simmer for 30 minutes. Remove from the heat, and let cool overnight.

The next day, pour the cooking liquid through a fine strainer into a saucepan.

Julienne 1 tablespoon of the ginger. Coarsely grate the remaining ginger, and simmer for 20 minutes in the cooking liquid. Add the lemon juice and jam sugar to the liquid and bring to a boil. Remove from the heat, and place in the prepared clean jars. Seal tightly, and turn upside down to cool for 10 minutes. Turn right side up and cool completely.
