- 200 grams Salmon (skinned)
- 100 milliliters gin
- 1 lemon (juiced)
- Sea salt
- 100 grams Crème fraiche
- 1 Tbsp freshly chopped Dill
- freshly ground peppers
- 9 sheets baby Spinach
- 9 Oatmeal Cookies

Preparation steps
1.
Rinse the salmon and pat dry. Place in a freezer bag, pour in the gin and lemon juice, seal and marinate in the refrigerator for about 1 hour.

Preheat the oven to 100°C (approximately 210°F).

Place salmon with the marinade in a baking dish, season with salt and cook for about 25 minutes in the oven.
4.
Mix the crème fraîche with the dill and season with salt and pepper.
5.
Rinse spinach, trim and spin dry. Place on the oatmeal wafers. Remove the salmon from the oven, allow to cool to lukewarm and divide into 9 pieces. Place on the spinach, top with the cream and serve.
