Ingredients

For the dumplings
800 grams day-old White roll
400 milliliters milk
2 shallots
2 Tbsps butter
2 Tbsps freshly chopped parsley
4 eggs
salt
freshly ground peppers
Nutmeg
1 Tbsp butter (for the cloth)

Preparation steps

Slice the bread. Bring the milk to a boil then pour over the bread. Let stand for about 10 minutes. Peel the shallot, chop finely and sweat in hot butter until translucent. Remove from the heat and add to the bread along with the parsley and eggs. Season with salt, pepper and nutmeg. Coat a damp linen or tea towel with the butter. Add the dumpling filling, shape into a roll and wrap firmly in the towel. Tie the ends with butcher’s twine and poach in simmer water for 30 minutes.

Remove from the water, let rest briefly then unwrap the cloth and slice. Arrange on a serving platter and serve.
