- For the seafood
- 8 cups salt cod
- 12 Prawn
- 1 bunch young carrots
- 1 head Broccoli
- 12 Cocktail tomatoes
- 1 Bouquet garni
- lemon juice
- 1 lemon (sliced)
- 3 sprigs Chervil (chopped)

- For the sauce
- 10 cloves garlic cloves
- 1 egg yolk
- 1 tsp lemon juice
- 1 cup olive oil

Preparation steps

Soak the salt cod: Place the cod in a large bowl of cold water and leave to soak for 12 hours, changing the water regularly.

Drain the cod and chop into pieces. Bring a saucepan of water to the boil along with the bouquet garni. Add the cod and poach for 15 minutes. Drain and put to one side.

Wash and peel the vegetables. Place the broccoli florets in the basket of a steamer and cook for 10 minutes. Remove the broccoli and then steam the carrots for 20 minutes. Cover all the ingredients with cling film and chill overnight.

The next day make the sauce: Peel the garlic cloves. Crush them with a pestle and mortar together with the lemon juice then transfer to a large bowl. Add the egg yolk and whisk continually as you incorporate the olive oil. Season.
5.
Shell the prawns. Arrange all the ingredients on a large platter and serve immediately with the Aïoli.
