12 garlic cloves
2 Tbsps olive oil
2 bay leaves
1 sprig Sage
100 grams grated Parmesan
2 egg yolks
2 Tbsps Whipped cream
2 Tbsps sherry
1 Tbsp lemon juice
1 Tbsp Mustard
4 sprigs Basil

Preparation steps

Peel the garlic. Rinse the sage leaves. Bring the vegetable broth, garlic, sage, bay leaves and olive oil to a boil. Simmer, partially covered, for about 15 minutes.

Remove the sage and bay leaves. Puree the soup finely. Mix the parmesan, egg yolks and cream. Remove the soup from the heat and carefully stir in the cheese mixture.

3.

Season with sherry, lemon juice, mustard, salt and pepper. Serve garnished with basil.
