- 3 Tbsps olive oil
- 2 ½ cups Chorizo (sausage)
- 2 onions (quartered)
- 2 cloves garlic cloves (peeled and minced)
- 3 cups small potatoes (peeled)
- 1 small Leek (cleaned and chopped)
- 2 carrots (peeled and chopped)
- 2 stalks Celery (rinsed and chopped)
- 2 cups canned Tomatoes
- 4 cups Vegetable broth
- salt (to taste)
- freshly ground Black pepper
- 1 bay leaf
- 2 tsps dried oregano
- 2 ¼ cups canned chickpeas (drained)
- fresh thyme (for garnish)

Preparation steps

In a large stockpot heat the olive oil over medium heat. Cook the chorizo, onions and garlic in olive oil for about 4 to 5 minutes. Add the vegetables, canned tomatoes and broth, season with salt, pepper, bay leaf, and oregano. Cover and simmer gently for about 30 minutes on low heat.

Drain the chickpeas and add to the stew. Heat through, about 3 minutes. Check seasoning and adjust if necessary. Garnish with fresh thyme. Ladle into individual serving bowls. Serve.
