Full English Gratin
ready in 50 min.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
Mix together the potatoes, mushrooms, onion, half of the tomatoes and half of the spring onions and divide evenly between four small oven-proof frying pans. Top with the sausages.
Mix together the cream and cheese and season well with salt and ground black pepper. Pour the mixture over the vegetables and bake in the oven for around 20 minutes until golden brown.
Carefully crack two eggs on top of each pan. Sprinkle over the remaining spring onion and top with the remaining tomatoes. Bake for a further 5-10 minutes until done.
