2 Apple (e. g. Granny Smith; peeled, cored and diced)
½ unwaxed lemon (juiced)
½ tsp ground cinnamon
3 Tbsps sugar
2 Banana (diced)
14 ozs frozen Puff pastry (defrosted)
flour (for the work surface)
¼ cup melted butter
1 cup fresh breadcrumbs

Preparation steps

1.
Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7 and line a baking tray with grease-proof paper.
2.
Mix together the apples, lemon juice, cinnamon and sugar. Fold in the bananas.
3.
Roll out the pastry on a floured work surface and cut into eight 15 cm squares. Brush each square with some melted butter and sprinkle with breadcrumbs.
4.
Place some of the fruit mixture into the middle of each square and fold the corners into the middle. Brush with the remaining butter and sprinkle with sugar. Place the pastries on the prepared baking tray and bake for 25-30 min. Remove from the oven, leave to cool and then serve.
