For the pastry
300 grams Puff pastry dough (frozen)
Pastry flour (for the work surface)
For the topping
6 Cherry tomatoes
1 onion
1 Tbsp balsamic vinegar
2 Tbsps olive oil
salt
freshly ground peppers
rosemary
1 Tbsp finely chopped Basil

Preparation steps

For the pastry, preheat the oven to 200°C (approximately 400°F). Thaw the pastry, stack the sheets and roll out on a floured surface to about 18 x 24 cm (approximately 7 x 9 1/2 inches). Cut into 12 squares of around 6 cm (approximately 2 1/4 inches). For the topping, rinse and halve the tomatoes. Peel the onion and cut into thin strips.

Spread the tomatoes and onions over the pastry squares, sprinkle with a few drops of balsamic vinegar and oil, season with salt and pepper and sprinkle the rosemary and finely chopped basil over the top. Bake in preheated oven for 15-20 minutes. Remove and serve immediately.
