- 150 grams almonds (shelled)
- 1 garlic clove
- 2 centimeters ginger
- 2 Tbsps Curry (mild)
- salt
- freshly ground peppers
- 1 pinch Cumin
- 100 milliliters Vegetable broth
- 300 grams Double cream
- ½ Banana
- 5 Tbsps Orange juice
- Oranges (for garnish)

Preparation steps

Peel the garlic and ginger. Finely chop the garlic, ginger, and almonds in a food processor. Transfer to a dry frying pan, and sauté over medium heat. Add the spices and the broth, and simmer for 10 minutes. Add the mixture to a blender, add the banana, and puree. Add the heavy cream gradually, until a thick sauce has formed. Adjust the seasoning, then add the orange juice.

Serve the sauce hot or cold, garnished with orange slices. This goes well with fish or seafood.
