- 200 grams Arborio rice
- 800 milliliters milk
- 125 grams sugar
- 1 pinch salt
- 600 grams Plum
- 100 grams Chocolate
- 4 medium eggs
- 50 grams Macadamia Nuts
- 50 grams butter
Preparation steps
Rinse rice in a sieve with cold water, drain and combine with milk, half the sugar and the salt in a pot. Bring to a boil, then reduce heat and cover. Simmer gently for 15-20 minutes. Put the rice in a bowl allow to cool slightly.
Preheat the oven to 180°C (approximately 350°F). Rinse and halve plums, removing pits. Chop chocolate coarsely. Separate the eggs. Stir together yolks, plums and chocolate. Beat egg white until stiff, sprinkle in the remaining sugar (60 grams or approximately 2 1/2 tbsp). Fold egg whites into rice pudding. Place the rice pudding in an ovenproof dish (20 x 20 cm or approximately 8 x 8 inches). Chop the macadamia nuts coarsely and spread on the rice pudding along with small pieces of butter. Bake the rice casserole in the hot oven on the middle rack until golden brown 30-40 minutes. Serve warm.
