- ½ cup unsalted butter
- ½ cup caster sugar (plus extra for sprinkling)
- 1 unwaxed Orange (finely grated zest)
- 2 Tbsps Orange juice
- 2 eggs (beaten)
- ¾ cup all-purpose flour
- ¾ cup self-rising flour
- 4 Tbsps milk
- 1 cup Blueberries

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 8 x 5cm|2" mini loaf tins.
2.
Beat together the butter, sugar and orange zest in a mixing bowl until pale and creamy.
3.
Gradually beat in the eggs, with a little of the flour.
4.
Sift in the remaining flours then fold into the mixture with the orange juice and milk until a dropping consistency. Stir in the blueberries.
5.
Spoon into the tins and sprinkle with sugar. Bake for 25-30 minutes until risen and golden. Cool in the tins for 15 minutes, then place on a wire rack to cool completely.
