- 1 ⅔ cups mixed Dried Fruit
- 1 cup brewed Tea
- 1 Orange (juiced)
- ¼ cup unsalted butter (softened)
- ⅔ cup soft light brown sugar
- 1 large egg (beaten)
- 1 ½ cups gluten-free all purpose flour (sifted)
- 1 tsp gluten-free Baking powder
- 1 pinch salt
- 1 cup Ricotta cheese

Preparation steps
1.
Preheat the oven to 180°C(160° fan)|350F|gas 5. Grease and line a 900 g | 2 lb loaf tin with greaseproof paper.

Mix together the dried fruit, tea, and orange juice in a large mixing bowl. Cover and leave to soak for 1 hour.
3.
Cream together the butter and sugar in a large mixing bowl until smooth and creamy, 2-3 minutes.

Beat in the egg, and then incorporate the flour in two additions. Fold through the baking powder and salt.
5.
Fold through the tea-soaked fruit and spoon the batter into the prepared tin, spreading it flat with the back of a wetted tablespoon.
6.
Bake for 1 hour 5-10 minutes until risen and set. A cakes tester should come out clean from its centre when inserted.
7.
Remove to a wire rack to cool before turning out, slicing, and serving with the ricotta.
