- ⅞ cup dry Red wine
- 1 stick cinnamon
- 2 cloves
- 1 Star anise
- ¼ cup caster sugar
- 8 ripe Figs (chopped into eighths)
- ½ Sponge cake base (ready-made)
- ⅔ cup cream (at least 30 % fat)
- 2 Tbsps powdered sugar
- ⅔ cup Mascarpone
- 1 Tbsp lemon juice

Preparation steps
1.
Bring the red wine to the boil in a saucepan with the spices and the sugar. Reduce the heat and add the figs. Leave for 10 minutes.

Crumble the sponge cake roughly. Whip the cream with the icing sugar until stiff. Mix the mascarpone

with the lemon juice until smooth and fold gradually into the cream.

Remove the figs from the wine, let cool and mix with the cake crumbs. Boil the wine until reduced to a syrup.
5.
Layer the fig/cake crumb mixture with the Mascarpone cream in 4 dessert glasses. Trickle a little syrup over and serve at once.
