This light salad is packed with protein from the goat cheese and an abundance of minerals from the frisee.

This recipe tastes delicious with fresh goat cheese instead of broiled as well.

4 Tbsps balsamic vinegar
2 Tbsps Orange blossom honey
1 Orange
1 Frisée
2 circles Goat cheese
4 ozs Blackberry
4 Tbsps powdered sugar
2 Tbsps Blackberry liquor

Preparation steps

Trim strawberries, rinse and halve or quarter. Combine balsamic vinegar with honey in a pot. Rinse the orange in hot water and zest a small amount for vinegar. Zest the remaining peel on a plate and set aside. Squeeze the orange and put four tablespoons of juice into the pot.

Boil everything down to a syrup, cool and pour over the strawberries. Cover and let rest one hour. Trim the frisee, rinse, spin dry and place on two plates. Remove rind from the goat cheese and broil 4 to 6 minutes.

Pick the blackberries, rinse and drain well. Melt the powdered sugar in a pan to a light caramel. Stir in the liqueur and continue heating until the caramel is liquid again. Put in the blackberries. To serve, arrange cheese, strawberries and remaining orange zest on the salad, drizzle blackberry mixture on top.
