- For the Plantain Puree
- 2 unpeeled plantains (cut into pieces)
- 2 ⅔ cups water
- kosher salt (to taste)
- ⅔ cup sliced anaheim peppers
- 0.333 cup fresh cilantro (finely chopped)
- For the Tofu Sticks
- 1 cup Panko (breadcrumbs)
- ½ Tbsp Garlic salt
- ¼ tsp Chili powder
- ¼ cup Chickpea flour (garbanzo)
- ½ cup Egg substitute
- 16 ozs extra firm Tofu (pressed)

For the Plantain Puree:

Place the plantains and water in a saucepan. Bring to a boil, and cook 20 minutes, until plantains are tender but slightly firm. Drain, reserving 1 cup of the liquid. Let the plantains cool, and then peel them.

In a bowl, mash the plantains with the reserved liquid and salt. Transfer to a food processor, mix in the peppers and cilantro, and puree.

For the Tofu Sticks:

Preheat oven to 400° F/205° C.

Mix together bread crumbs, garlic salt, and chili powder.

Prep the dipping station with 3 shallow bowls. First bowl: garbonzo bean flour. Second bowl: egg substitute. Third bowl: bread crumb mixture.

Slice tofu into 1/4 inch thick pieces. Dip each tofu slice into the flour, then the egg, then the bread crumbs.

Set each breaded slice onto a baking sheet lined with parchment or lightly greased. Bake for 20 minutes, then flip tofu and bake an additional 10 minutes. Breading should be lightly browned. Lay the tofu sticks on top of the plantain puree and serve.
