- 600 milliliters Vegetable broth
- 300 grams Long grain rice
- 3 onions
- 2 Tomatoes
- 1 bunch cilantro
- 150 grams Cashews
- 2 Tbsps Corn oil
- 1 Tbsp light soy sauce
- 1 Tbsp Oyster sauce
- Rice vinegar (to taste)

Preparation steps

In a large pot, cook rice with vegetable broth for about 20 minutes. Meanwhile peel the onions and cut into thin strips. Rinse tomatoes, quarter and cut into thin columns. Rinse the cilantro, shake dry and cut the leaves into thin strips.

Without adding any oil, toast cashew nuts in a pan until golden brown, remove and set aside. In a wok, heat oil and sauté the onion strips. Add tomato and cooked rice, mixing well. Add soy sauce, oyster sauce and some rice vinegar. Season with pepper and stir in the cashews and cilantro. Serve in bowls.
