Fried Kohlrabi with Yogurt Dip

100 grams Pastry flour
1 egg
125 milliliters white Wine
200 grams Greek yogurt
2 Tbsps lemon juice
1 bunch Radish about 100 grams (approximately 3.5 ounces)
2 Tbsps scallions
salt
freshly ground white peppers
1 Tbsp Sunflower seed
2 large Kohlrabi
500 milliliters vegetable oil

Preparation steps

1.

Whisk together the flour, egg, white wine and a pinch of salt until smooth. Cover and let stand for 30 minutes. 

2.

Whisk the Greek yogurt and lemon juice together until smooth. Rinse the radishes, cut into matchsticks and stir into the yogurt along with the chopped chives. Season with salt and pepper. Toast the sunflower seeds in a dry pan until golden brown.

Peel the kohlrabi and cut into wedges.

Heat the vegetable oil in a large saucepan. (Test the temperature of the oil by dipping the handle of a wooden spoon into it. When small bubbles form, the oil is ready.) 

5.

Working in batches, dip the kohlrabi wedges into the batter then carefully drop into the hot oil. Fry for about 3 minutes, until golden brown. Drain on paper towels and serve with the yogurt dip.
