- 2 cups cooked, white Sushi rice
- ½ cup Rice vinegar
- 1 Tbsp vegetable oil
- ¼ cup granulated sugar
- 1 tsp salt
- 6 ozs fresh Tuna
- 1 Tbsp Peanut oil
- 3 tsps Wasabi paste
- 1 Radish (peeled; for garnish)
- 16 fresh Fresh herbs (for serving)

Preparation steps
1.
In a small saucepan, combine vinegar, oil, sugar and salt. Cook over medium heat until sugar dissolves. Cool; stir into prepared rice. Continue stirring until the rice is cool enough to handle.

Using your hands or a rice mold, form the rice into 16 small oblong balls.

Slice the tuna into 16 equal thin strips. Heat the oil in a grill pan. Sear the tuna slices very quickly on one side and remove from pan. Spread wasabi to taste on the uncooked side. Place tuna slices wasabi side down on top of the rice balls. Place the sushi on fresh herb leaves and top with very thinly sliced radish. Serve immediately.
