Preparation steps

Divide the sushi rice into 8 portions and shape each portion into oblong balls with hands moistened in vinegar water. Cut the mackerel fillets into 8 pieces, lay 1 piece in one hand and brush with some wasabi on the bottom. Place a rice ball on the coated side of mackerel and press gently, pressing the left thumb tip up against the rice ball so that it retains its shape. Flip the nigiri sushi and reshape with two fingers if necessary. Prepare the remaining mackerel nigiri.

Cut the nori into 8 strips. Wrap each nori strip around the nigiri. Slightly moisten the underside of the ends of the nigiri and press. Serve the nigiri sushi with the rice sides down.
