Preparation steps

1.

Peel the kiwis and cut crosswise into round slices.

2.

Rinse the figs and cut into quarters.

3.

Arrange the kiwis on plates in a ring around the outside and top with the figs.

4.

Rinse the nectarines, cut in half, remove the pits, and cut into thin wedges.

5.

In a saucepan, boil the currant juice until syrupy. Add the nectarine slices and almonds, return to a simmer, and spoon over the kiwis.

6.

For the banana-date mousse: Pit the dates and chop very fine with a knife.

7.

Peel the banana, mash until very smooth, and fold the dates into the banana.

To serve, spoon the banana-date mousse decoratively on the salad.
