French Style Pumpkin Gratins
Cut pumpkin pulp cut into small cubes. Rinse and halve bell pepper, remove seeds and ribs, cut into small cubes. Peel garlic and chop finely. Rinse thyme, shake dry and pluck off leaves. Whisk egg yolks with half of oil and milk. Place vegetables with garlic and thyme in a bowl and mix well. Season with salt, pepper and nutmeg. Arrange mixture in 4 oiled ramekins, pour egg mixture over and sprinkle with cheese. Bake in preheated oven at 180°C (approximately 350°F) for about 40 minutes. Serve.
