Preparation steps
1.
Heat the butter and sugar in an ovenproof frying pan until melted, stirring occasionally.
2.
Peel and core the apples. Cut 1 apple in half and cut the remaining apples into quarters.
3.
Remove the pan from the heat and arrange the apples in the pan, with the apple halves in the centre, fitting them together tightly. Return the pan to the heat and bring to a boil.
4.
Reduce the heat and cook for 10-20 minutes, depending on the ripeness of the apples, until the mixture becomes caramel coloured.
5.
Heat the oven to 220°C (200° fan) 425°F gas 7.
6.
Roll out the pastry 5cm|2" larger than the pan and place it carefully over the apples, pressing the sides to the edges of the pan.
7.
Bake for 20-25 minutes until the pastry is golden. Remove from the oven and leave to cool for 10 minutes.
8.
Run a knife around the edge of the pastry. Place a serving plate over the pan and invert onto a serving plate.
