- 2 Tbsps lemon juice
- 2 Tbsps brown sugar
- 3 Tbsps butter
- 16 ozs ready-rolled Puff pastry (thawed if frozen)

Preparation steps
1.
Heat the oven to 220ºC (200º fan) 325ºF, gas 7.
2.
Drain the pear halves, pouring the liquid into a small pan. Cut the pear halves in half and set aside.
3.
Add the lemon juice and sugar to the pan and bring to a fast boil.
4.
Meanwhile, melt the butter in a large ovenproof frying pan (skillet), let it bubble then arrange the pear quarters around the pan.
5.
Pour over the syrup and let it simmer while you cut a circle of pastry slightly larger than the pan. Place the pastry on top of the pan, tucking in the edges, then transfer the pan to the oven and bake for 15 minutes or until the pastry is golden brown.
6.
Carefully upturn the tart onto a serving plate and serve warm or cold.
