32 ozs ripe, green Gooseberry
Rose petal (from 3-4 roses)
1.333 cups water

Product recommendation
Use heavily scented red or pink petals that are free from chemicals and pesticides -roses bought from a florist aren’t suitable. Remove the heel – the white part at the base (this has a bitter flavour) and wash the flowers gently before use.

Preparation steps

1.
Put the gooseberries, rose petals and water into a large heavy-based pan.
2.
Heat gently to boiling point, then reduce the heat, cover the pan and simmer very gently until the skins are soft, stirring from time to time to prevent the fruit sticking.
3.
Ladle the fruit and juices into a scalded jelly bag. Strain the juice through the jelly bag overnight into a bowl. Do not squeeze the bag or the jelly will be cloudy.
4.
Measure the juice into a large heavy-based pan and to every 600 ml| 20 fl oz juice allow 450g|1lb sugar.
5.
Heat the juice and sugar in the pan and stir over a low heat until the sugar has dissolved completely. Bring to a boil and boil rapidly until setting point is reached. Skim off any scum on the surface and stir in the rosewater if using.
6.
Pour into warm sterilised jars. Cover, seal and label
