Preparation steps

1.

Beat the egg whites until stiff, then gradually sprinkle in the powdered sugar and continue to beat until the meringue is stiff and shiny.

2.

For the custard sauce, slit the vanilla pod and scrape out the seeds. Bring to a boil with the milk and sugar. Remove from the heat and remove the vanilla bean. While stirring, add the chocolate and pistachios admit. Puree the sauce and pour into bowls. Place the floating island (meringue) on top, sprinkle with cinnamon and serve immediately.
