Preparation steps

Combine rice with cold milk, add lemon zest and scraped vanilla seeds. Bring to a boil, stirring frequently. Turn off heat and let rice soak for about 25 minutes. Remove lid and cool.

Preheat the oven to 180 ° C convection.

Rinse fresh lemon in hot water, wipe dry and grate zest. Finely chop half of zest. Separate eggs. Combine egg whites with salt and lemon juice, beat until stiff. Beat egg yolks with butter and sugar until fluffy. Combine yolks and chopped lemon zest with rice. Fold in egg whites. Pour mixture into a buttered baking dish and bake in preheated oven at 180°C (approximately 350°F) for about 40-50 minutes. Take out of the oven, cool slightly and serve sprinkle with powered sugar and garnished with remaining lemon zest.
