1 yellow Bell pepper (about 200 grams)
1 bunch Basil
1 pc Parmesan (40 grams)
100 grams Tomato paste (from a tube)
500 grams Flatbread (or pita bread)
300 grams cooked ham (in slices)
300 grams Gouda (in slices, 30% fat)
oregano (to taste)
3 Cucumber (about 500 grams)
½ lemon
4 Tbsps Canola oil (about 40 grams)
salt

1 pinch sugar
1 bunch Chives

1 Cutting board, 1 Small knife, 1 Large knife, 1 Fine grater, 2 Small bowls, 1 Serrated knife, 1 Knife (for brushing), 1 Baking sheet, 1 Parchment paper, 1 Mandoline, 1 Salad bowl, 1 Citrus juicer, 1 Tablespoon, 1 Whisk, 1 Salad server

Preparation steps

Rinse tomatoes, cut out stems and cut into thin slices. Rinse bell pepper, cut in half, remove seeds and cut it into 1 cm (approximately 1/2-inch) thick rings.

Rinse basil, shake dry and chop leaves finely. Grate Parmesan. Mix basil, Parmesan and tomato paste in a small bowl.

Spread tomato-cheese mixture over both slices of flatbread. Layer ham, tomatoes, and bell pepper rings over the mixture. Season to taste with oregano. Layer the slices of gouda cheese over the top.

Line 2 baking sheets with parchment paper and place the flatbreads on the sheets. Bake in preheated oven at 200°C (fan 180°C, gas mark 3) (approximately 400°F/convection 350°F) for 8 minutes.

Meanwhile, rinse cucumbers and slice into thin slices using a mandoline. Place in a salad bowl.

Rinse lemon in hot water, wipe dry and cut in half. Finely grate the peel in a small bowl and then squeeze out juice into the bowl.

Season the lemon juice with salt, pepper and 1 pinch of sugar. Whisk in the oil to make a dressing.

Rinse chives, shake dry and cut into rolls. Add chives to the dressing and then fold the dressing into the cucumbers. Cut the pita pizzas into 10 pieces (2 pieces per child) and serve with the cucumber salad.
