700 grams mixed fish fillets (such as monkfish, halibut, cod, wolffish, red mullet)
2 carrots
1 stalk Leeks
1 sm can button Mushroom (150 grams or approximately 5 ounces)
5 sprigs Chives
1 shallot
2 garlic cloves
200 milliliters white wine
600 milliliters fish stock
salt
freshly ground peppers
1 Tbsp lemon juice
4 Chervil (for garnish)

Preparation steps

Rinse the fish fillets, pat dry and cut into bite-size cubes. Peel the carrots and cut into strips. Rinse and trim the leeks, shake dry and cut into strips. Drain the mushrooms and cut in half. Rinse the chives, shake dry and cut into thin rings. Peel the shallot and garlic and chop finely.

In a saucepan, melt the butter and add the shallot, garlic and vegetable strips and sauté for about 2 minutes. Add the white wine and stock and bring to a boil. Remove from the heat and place the fish cubes in the broth. Season with salt, pepper and lemon juice and distribute in soup bowls. Serve garnished with the chives and chervil leaves.
