8 Red mullet fillets (frozen)
Leeks (1 large or 2 small stalks)
6 carrots
4 Tbsps chopped parsley
olive oil
salt
freshly ground peppers
2 lemons (Juiced)

Preparation steps

Whisk 100 ml (approximately 2/5 cup) of olive oil with lemon juice, season with salt and pepper and beat to a frothy cream. Thaw mullet. Peel and thinly slice carrots. Rinse leeks and cut into rings. Arrange 4 pieces of parchment paper on a flat surface and drizzle with some oil. Spread each piece with vegetables.

Sprinkle with parsley and top each portion with 2 fillets. Spread thickly with frothy cream. Season with salt and pepper and fold in papers tightly. Arrange parcels on a wire rack and bake in preheated oven at 200°C (approximately 400°F) for about 20 minutes. Remove from the oven and unfold carefully. Serve.
