8 large Tomatoes
1.333 cups smoked Salmon (roughly chopped)
cup cream cheese
4 Tbsps Crème fraiche
lemon juice (from 1 lemon)

Preparation steps

1.
Cut the tops off the tomatoes and carefully scoop out the seeds and flesh with a small spoon. Turn the hollowed out tomatoes upside down on kitchen paper to drain out excess moisture. Reserve the tomato tops.

Put the remaining ingredients in a food processor and blend until you have a coarse mousse. Season with salt and white pepper and fill the tomatoes.
3.
Cut double thickness strips of kitchen foil about 4 cm/1 1/2 in deep and wrap them around each of the tomatoes, securing with a paper clip.
4.
Spoon in the remaining mousse and chill for at least one hour. Remove the foil before serving and replace the tomato tops.
