- 250 grams Crème fraiche
- 250 grams Smoked fish (such as mackerel, trout, salmon)
- 6 sheets white gelatin
- freshly ground peppers
- salt
- 1 tsp Mustard
- lemon juice
- 2 tsps Dill (finely chopped)
- 100 grams Whipped cream

Preparation steps
1.
Soak the gelatin in cold water.
2.
Chop smoked fish very finely and mix with sour cream. Season with salt, pepper and mustard and stir in dill tips.
3.
Place dripping wet gelatin in a small pot. Dissolve over low heat and stir in the smoked fish mixture. Beat cream until stiff and fold into the fish mixture.
4.
Line a small baking dish (approximately 1 L/approximately 1 quart capacity) with plastic wrap, and fill with the mousse. Chill for about 3 hours..
5.
To serve, unmold the mousse on a plate and remove plastic wrap. Garnish with toasted garlic baguette slices and lettuce leaves, if desired.
