Fish Mousse Dumplings
Bring the water to a simmer in a saucepan set over a medium heat.
Poach the pike quenelles three at a time, turning them occasionally to help cook them. Poach for 3-4 minutes until soft and heated through.
Drain on kitchen paper before serving. If the water in the saucepan starts to run dry, top up with hot water, making sure the water stays at a steady simmer.
