- 4 Tbsps olive oil
- 1 onion (finely chopped)
- 1 stick Celery (finely chopped)
- 2 cloves garlic cloves (finely chopped)
- ½ cup white wine
- ½ cup fish stock (or water)
- 2 cups canned Tomatoes
- 3 cups firm White fish (cut into chunks)
- 12 large Prawn (shell on)
- 12 clam (cleaned)
- 12 mussels (cleaned)
- 4 Tbsps parsley
- salt
- peppers

Preparation steps
1.
Heat the oil in a large pan and gently fry the onion and celery until soft but not brown. Add the garlic and continue cooking for 2 minutes.

Add the wine and fish stock, let the mixture bubble then add the tomatoes and bring to a simmer. Cook gently for 10 minutes then season with salt and pepper.
3.
Add the fish and prawns, cook for 5 minutes then add the clams and mussels. Place a lid on the pan and cook until the clams and mussels have opened. Season to taste.
4.
Scatter over the parsley and serve immediately.
