1 ½ cups Mozzarella (drained and diced)
¼ cup olive oil
flat-leaf parsley (finely chopped)
4 large Red pepper (halved)

Preparation steps

1.
Preheat the oven to 190°C(170° fan)|375F|gas 5.
2.
Toss together the cheeses in a mixing bowl with two tablespoons of oil, the parsley, and some seasoning.
3.
Spoon into the pepper halves and arrange them in a roasting tray.
4.
Drizzle with the remaining oil. Roast for 25-30 minutes until the peppers are tender and starting to colour.
5.
Remove from the oven and leave to stand briefly before serving.
