1 Tbsp extra virgin olive oil
2 cloves garlic cloves (peeled and minced)
3 scallions (cleaned; trimmed and sliced lengthwise)
¾ cup dry white wine
3 cups large shrimp (20-25 per pound) peeled and deveined
freshly ground Black pepper (to taste)
salt (to taste)
1 pinch crushed, red Chili flakes (to taste)
4 sprigs fresh rosemary
4 sprigs fresh thyme

Preparation steps

1.
Heat a large skillet over medium heat. Add olive oil, garlic and green onions. Cook for 1 minute stirring constantly.

Pour in wine and simmer for 3 minutes. Add shrimp and cook for 3 minutes, turning once, until shrimp are pink and firm. Remove shrimp with a slotted spoon and set aside.

Add black pepper, salt, and red pepper flakes to taste to the skillet. Bring to boil, reduce heat, and simmer until volume of sauce has reduced by half.
4.
Return shrimp to the pan with rosemary and thyme and cook 2 minutes or until heated through.
5.
Transfer to serving dish and season with salt, pepper and crushed red peppers flakes as desired. Serve.
