- For the panna cotta
- 1 Tbsp Powdered gelatine
- 2 Tbsps cold water
- 2 cups cream (48% fat)
- 1 cup cream (18% fat)
- 1 Vanilla bean (seeds)
- ⅓ cup superfine caster sugar
- For the clementine sauce
- 8 Clementine
- ¼ cup caster sugar
- 1 tsp Corn starch
- 1 Tbsp water
- 3 Tbsps Orange liqueur (or mandarin)
- ½ lemon (juice)

Preparation steps
1.
For the panna cotta: sprinkle the gelatine over the water in a small pan. Stand for 5 minutes. Heat over a very low heat until the gelatine is dissolved, then remove from the heat.
2.
In a large pan, bring both creams, vanilla seeds and the sugar to a boil, stirring constantly. Immediately remove from the heat, cool slightly and stir in the gelatine mixture.

Divide between 4-6 ramekins or small bowls and cool to room temperature. Chill, covered, for at least 4 hours.

For the clementine sauce: finely grate the zest of 2 of the clementines and squeeze the juice from the remaining clementines.

Put into a pan with the sugar. Bring to a boil and simmer for 5 minutes.
6.
Combine the cornflour and water to make a paste, then whisk into the juice mixture. Cook until the sauce is lightly thickened.
7.
Add the liqueur and lemon juice to taste.
8.
Un-mould the panna cotta onto serving plates and serve with the sauce.
