- 2 tsps caster sugar
- 1 large, red Cabbage (cored and finely shredded)
- 2 Tbsps flat-leaf parsley (finely chopped)

- freshly ground Black pepper

Preparation steps

Whisk together the oil, vinegar, sugar, and seasoning in a large mixing bowl until the sugar has dissolved.

Add the cabbage, stir well to coat, and cover the bowl.

Chill overnight or for at least 8 hours.

Serve in a bowl, garnished with parsley.
