- 1 ⅔ cups Brussels sprouts (peeled and halved)
- ⅔ cup cherry tomatoes
- 1 cup onions (drained)
- ¼ cup olive oil
- 2 Tbsps balsamic vinegar
- 4 Tbsps Parmesan (shavings)
- parsley (to garnish)
Preparation steps
1.
Bring a large saucepan of salted water to the boil and blanch the Brussels sprouts for 3-4 minutes. Drain and refresh in iced water.

Toss together with the cherry tomatoes, onions, olive oil, balsamic vinegar and seasoning.
3.
Spoon into bowls and garnish with parmesan shavings and parsley leaves.
