- 2 Fennel bulb
- 5 Tomatoes
- 2 Chicken breasts
- 1 lemon (juice and zest)
- ½ Orange (juice)
- olive oil
- 2 scallions (cut into thin rings)
- salt
- freshly ground peppers

Preparation steps
1.
Season chicken breasts with salt, lemon zest and pepper. Drizzle with 4 tablespoons of olive oil.

Brush fennel (set the fennel leaves aside) and cut into thin columns. Rinse tomatoes and cut into wedges.
3.
Grill chicken breast fillets in a grill pan over medium heat about 4 minutes on each side. Remove from heat, let rest and cut diagonally into strips.
4.
Chop the fennel leaves finely. Mix fennel, tomatoes, fennel leaves and scallions well in a large bowl with 4 tablespoons olive oil, orange and lemon juice, season with salt and pepper. Let infuse for 10 minutes. Taste, distribute salad on plates and serve the meat on top.
