Fennel Salad with Bell Peppers
Toast sesame seeds in a hot dry skillet.
Rinse bell peppers, cut in half, remove seeds and cut into strips.
Rinse fennel, cut into quarters, remove stalk, set aside some fennel leaves and thinly slice fennel bulb.
Mix fennel bulb and bell peppers in a bowl.
Mix yogurt in a bowl with honey, lemon juice, sesame oil and parsley and season with salt. Drizzle yogurt mixture over fennel mixture and mix. Serve garnished with sesame seeds.
