- 1 large Fennel bulb
- 200 grams shrimp (deveined)
- 1 yellow Bell pepper
- 4 Tbsps lemon juice
- 1 Tbsp brown sugar
- 4 Tbsps olive oil
- Sea salt
- white peppers
Preparation steps

Rinse the fennel and cut into quarters. Remove the cores and thinly slice on a mandoline or with a knife. Set the fennel fronds aside for future use. Place the sliced fennel on a platter. Dissolve the sugar in the lemon juice and drizzle over the fennel.

Rinse the peppers, halve, remove the seeds and ribs, and chop very finely. Sprinkle over the fennel.

Heat the oil in a skillet. Add the shrimp and season with sea salt and white pepper to taste. Cook until the shrimp is just pink. Remove and spread the shrimp over the fennel salad. Drizzle with the oil and garnish with the fennel fronds.
