For the dressing

freshly ground Black pepper

chopped, mixed Herbs
To finish

Feta cheese (crumbled)

Preparation steps

Cook the broad beans in boiling water until just tender, then drain well.

Heat the oil in a frying pan and cook the pancetta until crisp and golden. Drain on kitchen paper.

Add the garlic to the pan and cook for 2-3 minutes until softened.
4.
For the dressing: whisk together all the ingredients and season to taste with salt and pepper.
5.
Stir the dressing into the warm beans and add the pancetta and garlic. Season to taste with ground black pepper.
6.
Stir in the salad leaves and divide between serving plates. Scatter the cheese over the salad.
