Ingredients

2 Papaya (each around 350 grams) (approximately 12 ounces)
3 Limes (juiced)
80 grams sugar
½ bunch mint

Preparation steps

1.

Cut the papayas in half lengthwise, scrape out the seeds and peel. Pluck the mint leaves and chop.

2.

Place 80 ml (approximately 1/3 cup) water in a small pot.

Add the sugar and boil for 1 minute. Remove from the heat and let cool.

4.

Cut the papaya halves into small pieces and place in a mixing bowl.

5.

Add the sugar syrup, mint and about 100 ml (approximately 1/2 cup) lime juice.

Purée. 

7.

Season the purée with lime juice.

8.

Transfer to a metal bowl, cover and place in the freezer.

9.

Freeze for 4 hours.

10.

Stir the purée every hour with a wooden spoon.

11.

Scoop into dessert bowls and serve immediately.
